Thanks for your understanding.For professional use, such as the commercial butcher trade or restaurant use, F. Dick has a solid reputation as a manufacturer of quality goods. Their sharpening steels are perhaps the best in the business. The company has been making knives in Germany since 1788. This older knife is a well used, quality piece. It has a carbon steel blade, with integral guard/bolster and full tang, same as the classic French Sabatier chef's knives. My guess as to age is pre-World War II, probably a good bit earlier. The knife has been well used and sharpened, see pictures for current state of the blade. Handles are solid, though they have verdigris at the three brass rivets attaching them to the tang. They show wear, with some of the wood worn away right at the bird's beak butt. I have not sharpened the knife. Knife is stamped with arrow pointing to the right toward "F. DICK / MADE IN GERMANY."
