This wonderful old butcher's rib-splitting knife may look merely BIG at first glance, but up close and personal it is truly SCARY. Known alternately as a rib-splitter or sometimes as a poultry cleaver, it's the knife you want to reach for when you only want to reach once. I assure you, whatever it is that you may need to divide in half with it, will be permanently divided in half on the first try. It is a heavy-duty piece, to say the least and has a RAZOR sharp edge so keen you can literally shave your face with it. WHAM--and one thing is now two things!
It's a beautiful piece and one of the older ones made by Foster Bros., who were once legitimately thought of as the finest makers of butcher knives in the United States. Its thick carbon steel blade was hand-forged with a tapered tang, triple iron-pinned riveted over a full and tapered tang, hafted with gorgeous beechwood handles. Beech handles, which are as warm and comfortable in the hand as they are easy on the eye, are also prized for their natural resistance to slippage and its water repellant properties. Its blade is marked "FOSTER BROS., " as you can see in the photos. Even if the knife wasn't marked at all, its identity would be unmistakable as a Foster Brothers knife; I've seen this configuration produced by a few others, but never so finely. The entire piece is beautifully weathered and it just begs to be held.
Though it has some considerable collector value, it would be a shame not to use it, if you're able. Carbon steel blades of this vintage can hold a razor's edge like no other and it can still do more than its share of butchering of game or livestock. Comes with with excellent size--10" blade (15" overall length) that is 2" wide and 1/4" thick, tapering from there--and heft, weighing in at a very impressive 14 ounces. If you plan on using this knife, I suspect you'll find none finer here on ebay or anywhere else. If you're simply collecting butcher knives, you're in luck--this is a rare opportunity to add some authenticity and quality to your collection with a knife you'll rightly come to think of as an heirloom.
